“POTATO” SALAD

1 bunch of cauliflower slightly dehydrated to soften

1 bunch of celery

1 apple with peel

3 green onions

1/2 avocado or less…mashed

dill

parsley

mustard greens

Cut up the cauliflower, celery, and apple and put in a large bowl. Add the mashed avocado and mix into the vegetables. Add some dill, parsley and mustard greens all chopped very small to taste. Serve cold

 CASSEROLE

2 zucchini slightly dehydrated and chopped into small pieces

1/2 head shredded cabbage

2 celery stalks chopped small

5 button mushrooms chopped small

SAUCE:

2 scallions

4 tomatoes

2 red pepper

2 mangos

Blend all the sauce ingredients together until smooth and creamy. Put the sauce into a large bowl. Add the chopped vegetables. Mix them all together with the sauce. Pour into a casserole dish and put in the dehydrator for 1 hour until warmed all the way through. Serve warm
